Pascal THOMAS70 years old, Pascal Thomas is based in the Chavignol hamlet - considered the top Sancerre village by many. This wine truly represents Sancerre, with green grass reflections in the glass as well as on the nose. The acidity will make your mouth water just thinking about it. On the finish it develops notes of straw and candy.This wine is made traditionally, with disregard as to what new neighbors are doing in Sancerre. The hamlet of Chavignol sits in an oval bowl (est-west), litteraly surrounded by vineyards with limestone, chalk & sandy soils. Short but hot summers ripen this Sauvignon Blanc whilst keeping all it's acidity.Serve at 13-14ºC. Pair with oysters, light dishes and white cheeses.

At 70, Pascal Thomas works from the hamlet of Chavignol, considered by many the top village in Sancerre — an oval bowl ringed by vineyards on limestone, chalk and sand. Made traditionally, with little regard for what the neighbours are up to, it captures Sauvignon Blanc's ripeness while keeping all its mouth-watering acidity.
