La Cave creates custom Champagne for select restaurants and wineries. Working directly with our small-grower producers in France, Frederick and Charles design specific cuvées tailored to each partner’s program, story, and clientele. Each label is exclusive — you won’t find it anywhere else.

Both are custom grower Champagnes from Champagne Guilleminot — a small family house in the Côte des Bars, each a specific blend drawn from 24+ parcels across three distinct terroirs.

A boutique Napa Valley winery devoted to high-elevation Cabernet Sauvignon — small lots drawn from hillside and mountain blocks across Coombsville, Mt. Veeder, Howell Mountain and beyond. The name is the promise: everything handwritten, everything handcrafted.

What we make: The Reliée Cuvée — from the French “reliée,” meaning bound, like the binding of a book — named for the families it links together. A grower Champagne made exclusively for Handwritten Wines.

Chef Claude Le Tohic — Meilleur Ouvrier de France and James Beard winner — built ONE65 on a single idea: bring the very best of France to Union Square. From the ingredients in his Michelin-starred kitchen to the bread in the patisserie, that standard carries all the way through — right down to the Champagne.

What we make: An exclusive cuvée for ONE65, carrying Le Tohic’s French standard from the kitchen all the way into the glass.
